Wine vinegar is an aged product that matures for a long time in large oak barrels, softening its pungency and giving it, over the years, intense aromas and woody notes.
SABA
The “Saba,” the Emilia-Ra name for cooked must, is a fresh product, already in use in these lands since ancient Roman times. The must from local grapes is cooked outdoors for many hours, concentrating until it becomes particularly sweet and dense. Traditionally it pairs with cheeses and, because of its sweetness, it has been rediscovered in pastry for use on ice creams, creams, and ricotta-based desserts.
GOLDEN WHITE AGRO-DOLCE
The Giusti White Agrodolce is born from the gentle pressing of Trebbiano grapes, from which a particularly sweet juice is obtained. This is then blended with high-quality white wine vinegars and aged in French oak and ash barrels.
