Wine vinegar is an aged product, which matures for a long time in large oak casks that soften its sharpness and over the years confer it intense aromas and woody notes.
SABA
The “Saba,” the Emilia-Romagna name for cooked grape must, is instead a fresh product, used in these lands since the time of the ancient Romans. Local grape must is cooked in the open air for many hours, concentrating it until it becomes particularly sweet and dense. Traditionally it pairs with cheeses and, because of its sweetness, it has been rediscovered in pastries for use on ice creams, creams, and ricotta-based desserts.
AGRODOLCE BIANCO
Giusti White Sweet-and-Sour is born from the soft pressing of Trebbiano grapes, from which a particularly sweet juice is obtained. This is then blended with high-quality white wine vinegars and aged in French oak and ash barriques. This procedure preserves the most fruity and floral aromas of the grape, creating a very agreeable condiment thanks to the contrast between low acidity and the sweet notes of yellow fruits and dried citrus.
