The back label of every bottle still reads "Originally produced for: Café No Sé".Traditional Production ProcessIlegal Mezcal is made with 100% Espadín agave using traditional production methods overseen by fourth-generation master mezcaleros:Roasting: Agave hearts (piñas) are roasted in underground conical stone pits.Crushing: The roasted agave is crushed using a horse-drawn tahona (a large stone wheel).Fermentation: It ferments naturally in pine wood vats using only wild yeast.Distillation: The liquid is twice-distilled in copper pot stills.The Three Main ExpressionsIlegal Mezcal Joven: This is the unaged, crystal-clear expression. It features prominent notes of sweet agave, green apple, citrus, and a hint of white pepper. It is highly recommended for cocktails like a Mezcal Margarita or a Classic Paloma.Ilegal Mezcal Reposado: Aged for 4 to 6 months in medium-charred American oak barrels.
