Item Description Japanese Kitchen Knife Maker: 濃州孫六 Nōshū Magoroku Type: 出刃 Deba Size (longest part): 29 × 5.5 cm Blade length: 15.5 cm Weight: 367 g Japanese kitchen knives are distinguished by their razor-sharp cutting ability and durability, achieved through techniques derived from the craft of Japanese sword-making. Their quality is highly regarded throughout the world. The oldest surviving Japanese kitchen knife dates to the Nara period and is preserved in the Shōsōin repository in Nara. Because knives were consumable tools used and sharpened until worn away, very few old examples survive; however, it is believed that knives existed even before the Nara period. These ancient knives resembled Japanese swords in shape and were characterized by their exceptionally long handles. It is said that knives closely resembling the modern deba, yanagiba, and nakiri styles were perfected during the mid- to late Edo period. The Edo period was an era of social stability and great flourishing of Japanese culture. In keeping with this, a rich variety of culinary cultures blossomed, and the tools best suited to each style of cooking developed alongside them.
