Japanese kitchen knives are renowned for their razor-sharp cutting edge and durability, made possible by drawing on the same forging techniques used in the production of Japanese swords. Their quality is highly regarded around the world.
The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved at the Shosoin Repository in Nara. As knives were consumable tools that were used while being repeatedly sharpened, very few old examples survive; however, it is believed that they existed even before the Nara period. These ancient knives are characterized by a shape similar to that of the Japanese sword and feature exceptionally long handles.
It is said that knives closely resembling the modern deba, yanagiba, and nakiri styles were perfected during the mid-to-late Edo period.
The Edo period was an era of social stability during which Japanese culture flourished greatly. Along with this, a rich variety of food cultures blossomed, and the tools best suited to each style of cuisine developed accordingly.
