Vinification The alcoholic fermentation is carried out in wood. Winemaking is carried out using malolactic fermentation. Passage of the entire Cuvée in oak barrels before bottling.

Aging From 60 to 72 months on the yeasts and 3 months of rest after disgorgement

Shaman 19 Brut Nature Grand Cru:

The Shaman 19 Champagne produced by Benoit Marguet was born in the renowned Grand Cru villages of Ambonnay and Bouzy where the old vines are strictly managed in a biodynamic way by this emblematic Vigneron. Made up of 75% Pinot Noir and the remaining 25% Chardonnay. after harvesting, the grapes carry out their first fermentation in wooden vats, spontaneously, thanks to the presence of only indigenous yeasts. 85% is the result of the harvest reported on the label and 15% is reserve wines. The subsequent stay on the yeasts varies from 30 to 36 months before disgorgement. The dosage is absent.
