Giovanni Canonica is a rather discreet winemaker from the Langhe from the media point of view, although his wines are authentic wonders, subject to competition among enthusiasts. They are wines that come from winemaking and traditional aging methods and that reflect their own terroir.
The winemaker has just three hectares of vineyards, located about 350 meters above sea level in the Paiagallo vineyard (divided between three owners), a hill just above the municipality of Barolo. The predominant grape variety is the nebbiolo, but there are also barbera plants. Although not certified, the estate works with respect for the environment and wine, therefore synthetic products are banned, only copper and sulfur are used, grapes are de-de-raped, fermentation is allowed only by indigenous yeasts and aging (at least 3 years) takes place in Slovenian oak barrels.
The result is authentic dream cuvées that transport the enthusiast into the magical world of Barolo.
