Agricultural engineer by training, Pierre Ménard is installed on only two small hectares of vineyards. He practices haute couture viticulture alone (no synthetic phyto products, use of herbal tea or decoction of plants, sowing of green manure...). The work in the cellar respects the beautiful raw material that enters it (no input except a little sulfur, very long fermentations without yeasting, very little new wood...). Quart des Noëls is the historic vintage of the estate, the one with which Pierre Ménard began his adventure in 2013. This is a parcel-type cuvée, from a very old century-old chenin vine. The soil here is schisto-grézeux and the orientation is due south. Traditionally, the term 'quart' is reserved for the most qualitative part of a climate (such as the formerly very famous Quart de Chaume within the former appellation Chaume). Fermentation and aging take place in barrels and half barrels that are not new.
