This limited release Shiraz is a result of fastidious vineyard, batch and barrel selection. The Old Adam is a combination of parcels of wine from the best blocks of shiraz from our vineyards. These vineyards are influenced by the temperate micro climate of warm days, cool evenings and dry conditions which prevail in Langhorne Creek during the ripening season. Every vintage, each parcel of shiraz is assessed and the most outstanding are nurtured and then blended to create the Old Adam. The concentrated, high quality parcels of fruit were fermented in open vats and then matured for 22 months in new and seasoned specifically selected, extra fine grain American and French Oak. Additional 12 months maturation in bottle allows full integration of oak and fruit tannin.
