Dom Pérignon is a legendary Champagne House and one of the most renowned in the world. In 1668, a young Benedictine monk, Dom Pierre Pérignon, was appointed procurator at the Abbey of Hautvillers. With the ambition to produce the "best wine in the world", he was deeply inspired and his vision revolutionized viticulture with standards that remain the reference for all champagne wines. The House's commitment is that champagnes can only be produced from a single year's harvest.
Dom Pérignon's productions were highly prized at that time. After Dom Pérignon's death, the price decreased somewhat, but not its popularity. Dom Pérignon champagnes have very long aging potential.
Only the best grapes of a single year are chosen.
Each vintage is singular and reinterprets the uniqueness of the seasons. Dom Pérignon dares not to declare a vintage if the result is not exceptional.
After more than eight years of elaboration in the cellar, the wine reflects the perfect balance of Dom Pérignon, his most beautiful promise.
Dom Pérignon is a vintage champagne, which means that it is made only from the grapes harvested for a single exceptional year. Each vintage of Dom Pérignon is unique and reflects the specific characteristics of that year. The traditional grape varieties of Champagne, Chardonnay and Pinot Noir, are used in the blend of Dom Pérignon, which gives the wine a remarkable complexity and aromatic richness.
The production process of Dom Pérignon is rigorous and is based on traditional methods. After the first fermentation, the wine is bottled with a pull liquor for a second fermentation in the bottle. It is then aged for at least seven years on lees, which gives it its finesse and creamy texture. Each bottle of Dom Pérignon is then disgorged by hand and receives a dose of shipping liquor, which allows to adjust the level of sweetness of the champagne.
