In 1995, we discovered that certain vines produced grapes whose flavor was markedly different from that of the surrounding plants. They conveyed a sense of fullness and volume, with profiles closer to a finished wine than to a grape. Two years later, we produced our first Cirsion, which was not released to the market, and found that with a short period of aging it achieved an incredible silkiness and an extraordinary fruit complexity. Each harvest, we walk the vineyards in search of this curious natural rarity and, one in a thousand, the grapes for Cirsion are selected.
