In the Mâconnais—the southernmost part of the Côte d’Or—the Valette family acts as a driving force.
The twelve-hectare estate has been farmed organically for over twenty years. Philippe Valette has applied biodynamic principles since 1992—a natural step for a winemaker who has always prioritized soil cultivation and respect for microbial life. Here, the Chardonnay vines are nurtured and kept free from all chemical treatments. This immense effort in the vineyard allows Philippe to protect the native yeast populations responsible for successful fermentation and compels the root systems to draw minerals from the deep limestone layers. The absence of added sulfur during winemaking is ensured through very long aging on the lees; no racking is performed, so as not to shock or stress the developing wine. Each year, the wines stand out for their fluidity and a particularly vibrant mouthfeel.
