It displays notes of aromatic herbs, flowers, dark-fleshed fruit, lavender, and pepper. It possesses great structure and savoriness, with velvety tannins and lovely acidity, leading to a persistent, balanced finish. Made from certified organic grapes. Hand-selected grapes; harvest in October. Fermentation and maceration last approximately 40 days, involving pump-overs and *délestage*, with the final 20 days carried out under a submerged cap. Aging takes place in large Austrian oak casks for about 24 months, followed by further bottle aging for approximately 12 months before release.
