Its northern exposure and 400-meter altitude on a very breezy slope contribute to the wine's aromatic profile and complexity. We aim to maintain good canopy cover right up to the harvest to prevent sunburn and excessive exposure to the warm winds rising from the valley toward the vineyard. Harvest takes place around mid-September. The wine undergoes brief, low-temperature skin contact to enhance its character and complexity. Fermentation is carried out at low temperatures using indigenous yeasts; following a winter rest period—during which the wine sits on its fermentation lees with repeated *remontage* (pumping over)—it is bottled directly, resting for several months before release. It displays a greenish-yellow hue with brilliant, intense highlights that immediately suggest a rich, full-bodied wine. Aromas include honey, butter, flint, tobacco, and tea, alongside fruity notes reminiscent of apricot, pear, and citrus (lemon and grapefruit), as well as herbal nuances like thyme, sage, nettle, and hawthorn.
