The harvest takes place at the end of September using perfectly ripe, carefully selected grapes. The whole grapes are held in the press for 5 hours at 15°C, followed by gentle pressing and static cold settling. Alcoholic fermentation is carried out at 18°C in stainless steel tanks. The wine is then stirred on its fine lees for several months before being filtered and prepared for bottling.
