Drouhin Vaudon Chablis 2022 from France, 6 bottles of 0.75 L, 100% Chardonnay, unoaked, produced by Joseph Drouhin in Chablis.
Description from the seller
The 2022 vintage of Joseph Drouhin Drouhin - Vaudon Chablis 2022 is a very typical, well-made Chablis: fresh, mineral-driven, and elegant rather than rich or buttery. Maison Joseph Drouhin farms organically/biodynamically in Chablis, and this bottling is fermented and aged in stainless steel to preserve purity and tension. What it tastes like: Lemon zest, grapefruit, green apple. Chalky/mineral “wet stone” character, Saline/oyster-shell notes. Light floral and fern/herbal touches. Crisp acidity with a clean, dry finish.
100% Chardonnay. Unoaked or very minimally oak-influenced. Medium-light body. High acidity. Best served around 10–12°C. If you normally drink buttery New World Chardonnay, this will feel much leaner and more mineral. If you enjoy Sancerre, Muscadet, oysters, sushi, or seafood-focused whites, this is right in the sweet spot. Reddit wine drinkers often describe Chablis styles like this as “saline,” “racy,” and “steely.” Food pairings
Oysters and shellfish. Sushi/sashimi. Grilled white fish.Goat cheese. Roast chicken with lemon.
Cream sauces where acidity can cut richnessDrink now or cellar? The 2022 drinks well now but can comfortably age another 3–6 years, gaining more honeyed and nutty complexity over time.
